  • 1 small carrot diced
  • 1/2 cup corn kernels fresh or frozen
  • 1 tsp toasted sesame oil plus more to taste
  • 2 to 3 green onions sliced for garnish

Method

  1. Rinse the rice under cool running water 2 to 3 times until the water runs mostly clear. Drain well and add to the rice cooker inner pot.
  2. Add the neutral oil and oyster sauce to the rice. Stir gently with a rice paddle until evenly coated.
  3. Peel and cube the potato. Dice the bacon and ham. Slice the mushrooms. Dice the carrot.
  4. Scatter the potato, bacon, ham, mushrooms, carrots, and corn over the rice in an even layer. Do not stir completely.
  5. Pour in water up to the normal 2-cup rice line in your rice cooker. Drizzle the toasted sesame oil over the top.
  6. Close the lid and select the regular rice mode or white rice mode. Do not open the lid during cooking.
  7. When the cycle finishes, let the rice rest on keep-warm for 5 minutes.
  8. Open the lid and fluff the rice gently with a rice paddle. Mix the ingredients evenly through the rice.
  9. Stir in the sliced green onions. Taste and add a little more sesame oil if desired. Serve hot.
