Easy Jianbing (Chinese Breakfast Crepe)

A crispy, savory Chinese breakfast crepe wrapped around a crunchy filling. No mung bean flour or special griddle required—just a non-stick pan and a 15-minute hack!

Total Time 15 minutes
Servings: 4 crepes
Course: Breakfast
Cuisine: Chinese

Ingredients

Group 1: For the Batter
  • 1 cup all-purpose flour
  • 1.5 cups room-temperature water
  • 1 pinch salt
Group 2: For the Filling & Sauce
  • 1 large egg
  • 1 tsp black sesame seeds
  • 1 tbsp chopped scallions
  • 1 tbsp chopped cilantro
  • 4-5 potato chips
  • 1 leaf lettuce
  • 2 tbsp sweet bean sauce
  • 1 tbsp chili garlic sauce
  • 1 tsp rice vinegar
  • 1 pinch sugar

Method

  1. Make the batter: Whisk flour, salt, and water in a bowl until completely smooth. Set aside.

  2. Make the sauce: Mix sweet bean sauce, chili garlic sauce, rice vinegar, and sugar in a small bowl. Taste and adjust.
  3. Heat the pan: Ensure your non-stick skillet (10-12 inches) is completely cold. Do not add any oil and do not turn on the heat yet.
  4. Spread the batter:Pour about 1/2 cup of batter into the center of the cold pan. Lift and tilt the pan in a circular motion to coat the bottom evenly. This is the key trick — spreading on a cold, un-oiled pan gives you time to get an even, thin layer before the batter sets.
  5. Cook the base: Turn the heat to medium-low. Cook until the batter changes from opaque white to translucent, about 1-2 minutes.
  6. Add the egg: Crack an egg onto the crepe. Use a spatula to break the yolk and spread it evenly over the surface.
  7. Add aromatics: While the egg is still wet, sprinkle sesame seeds, scallions, and cilantro over the top.
  8. Flip: Once the egg is mostly set and the edges curl up, carefully flip the crepe with a wide spatula.
  9. Sauce and fill: Brush the surface generously with the sauce. Place potato chips, lettuce, and sausage or ham (if using) in the center.
  10. Fold and serve: Fold the crepe into a packet. Slide onto a plate and eat immediately!

Notes

  • The Crunch Hack: Using potato chips is the ultimate time-saving hack to replace traditional fried crackers (bao cui). Add them right before folding so they stay crispy.
  • Cold Pan Method: Spreading batter on a cold pan is non-negotiable. It gives you time to swirl the batter thin before it sets.
  • Gluten-Free? Substitute the all-purpose flour with a 1:1 gluten-free flour blend.
