This rice is hearty enough to eat on its own, but it also pairs beautifully with classic Chinese comfort dishes. If you are feeding a crowd, serve it alongside my  tomato and egg stir-fry.

Some nights call for a dinner that basically cooks itself. This easy rice cooker potato rice is exactly that. You rinse the rice, stir in a little oil and oyster sauce, layer in diced potato, bacon, mushrooms, ham, carrots, and corn, then press start and walk away. It is a true dump-and-go meal with minimal cleanup and a savory, comforting payoff.

The rice comes out tender, the potato turns soft and creamy, the bacon and ham add a salty little punch, and the mushrooms soak up all the savory flavors. A handful of sliced green onions stirred in at the very end makes the whole pot smell warm and inviting. If you have been looking for a hands-off rice cooker recipe for busy weeknights, this one is worth keeping in rotation.

Why This Rice Cooker Potato Rice Works

First, it is genuinely hands-off. There is no separate pot for the vegetables and no long list of spices. The rice absorbs the oyster sauce and the savory juices from the bacon and mushrooms, so every spoonful is flavorful. It is set-it-and-forget-it cooking at its best—perfect for busy weeknights, lazy Sundays, or meal prep.

Second, it is highly flexible. The combination of bacon, ham, and mushrooms gives it a great “clean out the fridge” vibe. The potato is the heart of the dish, giving the rice a soft, comforting texture. The carrots and corn add a pop of sweetness and color, while the green onions at the end bring everything to life.

The key is to use the normal water level for your rice cooker. The mushrooms, corn, and carrots release a little moisture, but they should not throw off the rice-to-water ratio. Add water to the usual line for 2 cups of rice, then let the cooker do its job. No mushy rice, no fuss.

How to Make Rice Cooker Potato Rice

Step 1: Rinse the rice

Put 2 cups long-grain white rice in a bowl and rinse it under cool running water 2 to 3 times, until the water runs mostly clear. Drain well and add the rice to the rice cooker inner pot.

Step 2: Stir in the oil and oyster sauce

Add 1 tablespoon neutral oil and 2 tablespoons oyster sauce to the rice. Stir gently with a rice paddle until the rice is evenly coated. This gives the rice a savory base flavor. If your bacon is very salty, start with 1 1/2 tablespoons oyster sauce and add more after tasting.

Step 3: Layer in the potato, meat, and vegetables

Peel 1 medium potato (about 8 oz) and cut it into small, bite-sized cubes (about the size of a pea or slightly larger, just like the picture). Dice 4 oz bacon and 1/2 cup ham into small pieces. Slice 4 to 5 fresh shiitake mushrooms (or 1/2 cup dried mushrooms, rehydrated and chopped). Dice 1 small carrot. Scatter the potato, bacon, ham, mushrooms, carrots, and 1/2 cup corn kernels over the rice. Do not stir them in completely—just spread them in an even layer.

Dump-and-go prep: Just layer your ingredients over the rice, add water, and press start!

Step 4: Add water to the normal rice line

Pour in water up to the normal 2-cup rice line in your rice cooker. If your cooker uses a different line for 2 cups of rice, follow your cooker’s markings. Do not exceed the maximum fill line. Drizzle 1 teaspoon toasted sesame oil over the top.

Step 5: Cook on the regular rice mode

Close the lid and select the regular rice mode or white rice mode. Do not open the lid while the rice is cooking. Let the cooker finish its full cycle and switch to keep-warm.

Step 6: Rest, fluff, and finish with green onions

When the cycle finishes, let the rice rest on keep-warm for 5 minutes. Open the lid, fluff the rice gently with a rice paddle, and mix the potato, bacon, ham, mushrooms, carrots, and corn evenly through the rice. Stir in 2 to 3 sliced green onions. Taste and add a little more sesame oil if you like. Serve hot.

Your Rice Cooker Potato Rice Game Plan

Shopping List

  • 2 cups long-grain white rice, rinsed and drained
  • 1 tbsp neutral oil
  • 2 tbsp oyster sauce (reduce to 1 1/2 tbsp if bacon is very salty)
  • 1 medium potato (about 8 oz), peeled and cut into small, bite-sized cubes
  • 4 oz bacon, diced small
  • 1/2 cup ham, diced
  • 4 to 5 fresh shiitake mushrooms, sliced (or 1/2 cup rehydrated dried mushrooms)
  • 1 small carrot, diced
  • 1/2 cup corn kernels, fresh or frozen
  • Water to the normal 2-cup rice line in your rice cooker
  • 1 tsp toasted sesame oil, plus more to taste
  • 2 to 3 green onions, sliced (for garnish)

Ingredient Swaps for U.S. Grocery Stores

  • Bacon & Ham: Use regular U.S. supermarket bacon (thick-cut or regular works) and diced ham. You can also swap the ham for hot dog slices or Chinese sausage (lap cheong). If using Chinese sausage, reduce the oyster sauce slightly.
  • Mushrooms: Fresh shiitake is great, but cremini (baby bella) or white button mushrooms work perfectly fine. If using dried shiitake, soak them in warm water for 20 minutes before chopping.
  • Carrots: Adds a touch of sweetness and crunch. Frozen mixed vegetables (peas and carrots) can also be used to save time.
  • Oyster sauce: No oyster sauce? Use 1 1/2 tablespoons soy sauce plus 1/2 teaspoon sugar. The flavor will be a little different but still savory.
  • Potato: Yukon Gold or red potatoes work best because they hold their shape. Russet potatoes also work but may break down a little more.
  • Green onions: Don’t skip these! They add a fresh, bright finish that balances the rich, savory rice.

Tool Tips

  • You will need a standard rice cooker to make this hands-off. If you don’t have one,  this highly-rated basic model  (paid link) is a solid choice.

  • Use a liquid measuring cup for the water and a dry measuring cup for the rice. This keeps the rice-to-water ratio consistent.
  • Do not open the lid during cooking. The rice cooker needs trapped steam to cook the rice evenly.
  • If your rice cooker has a “mixed rice” or “sweet rice” mode, start with the regular white rice mode. Mixed rice mode can brown the bottom slightly, which some people love, but regular mode is more predictable.
  • Let the rice rest for 5 minutes on keep-warm before fluffing. This helps the moisture distribute evenly.

Where Most Home Cooks Get Stuck—and How to Fix It

  • The rice is too wet. Mushrooms and vegetables release moisture. Next time, sauté the mushrooms to remove water before adding them, or reduce the water slightly below the normal line.
  • The rice is too dry or crunchy. Your rice cooker may run a little hot, or the lid may not have sealed well. Add 2 tablespoons hot water, close the lid, and let it steam on keep-warm for 10 minutes.
  • The dish is too salty. Bacon, ham, and oyster sauce are all salty. Reduce the oyster sauce to 1 1/2 tablespoons, and do not add extra salt until you taste the final dish.
  • The potato is still firm. Cut the potato into smaller cubes, similar in size to the corn kernels, and spread them in a single layer rather than piling them up.
  • The bottom is sticking or burning. Some rice cookers brown the bottom of mixed rice dishes. If you do not want that, use the regular white rice mode and avoid adding extra oil.

Frequently Asked Questions

Can I use different meats?

Absolutely. This recipe is very forgiving. You can use just bacon, just ham, or a mix of both. Diced hot dogs or Chinese sausage are also great. If you use a saltier meat like Chinese sausage, just reduce the oyster sauce to 1 1/2 tablespoons.

Can I add other vegetables?

Yes. Frozen peas, edamame, or diced bell peppers are all great additions. Keep the total amount of added vegetables to about 1 1/2 cups so the rice still cooks evenly. If you add watery vegetables like zucchini, reduce the water slightly.

What if I do not have a rice cooker?

You can easily make this in a heavy-bottomed pot. A  Dutch oven (paid link) or a 12-inch deep skillet with a tight-fitting lid  (paid link) works perfectly. Combine everything in the pot, bring to a boil, then cover and simmer on low for 18 to 20 minutes.

Should I stir the ingredients before cooking?

Stir only the rice, oil, and oyster sauce at the beginning. Add the potato, meats, mushrooms, carrots, and corn in an even layer on top. Do not stir them in completely before cooking, because the rice needs to cook evenly and the ingredients should not crowd the bottom.

Can I make this recipe ahead of time?

Yes. Cool the rice completely, then store it in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave with a splash of water, or reheat gently in a covered skillet with 1 tablespoon of water. Add fresh green onions after reheating.

Is this recipe gluten-free?

It can be. Check that your oyster sauce is labeled gluten-free, or use gluten-free soy sauce plus a pinch of sugar. Also check the bacon and ham labels, since some cured meats contain gluten or additives.

This easy rice cooker potato rice is the kind of dinner that quietly becomes a regular in your rotation. It is savory, comforting, and forgiving—and the rice cooker does most of the work. Give it a try on a busy night, and let the warm, sesame-scented steam (and those fresh green onions) do the rest.
